Walking into the InterContinental Miami, I felt an immediate sense of anticipation.

I was very excited to have been invited for a stay and besides enjoying amenities such as their gorgeous spa and a cabana where I could sleep on for days (so relaxing). I had a chance to check out the hotel’s diverse dining spots.

With its stunning views and unbeatable location in the heart of downtown, the hotel is already an icon, but its dining scene takes things to another level. And trust me when I say that everyone will find something to enjoy.

Whether you’re craving bold Latin flavors, a breezy rooftop retreat, or a decadent breakfast to start your day, this hotel has something for every palate.

Also, a little advice for all those that love craft cocktails. Keep an eye out!

With that said, here’s a look at what to expect at the hotel’s dining establishments.

Toro Toro: A Pan-Latin Feast for the Senses

The moment I stepped into Toro Toro, the energy was intoxicating.

Think of lively music, the sizzle of expertly grilled meats, and the inviting scent of smoky spices, all coming together in one room, making it quite the fun vibe.

A creation of celebrity chef Richard Sandoval, this Pan-Latin steakhouse is a celebration of flavor, and it truly shows that the chef has a passion for cooking and showing off his inventive dishes to those who visit.

I started with the tableside smoked guacamole, mashed to perfection with ripe avocados, charred jalapeños, and fresh cilantro. Then came the short rib arepas, warm and pillowy with melt-in-your-mouth braised meat. But the star of the show was the churrasco, a tender, juicy cut of skirt steak served with chimichurri, perfectly balancing spice and freshness.

Every bite felt like a journey through Latin America and each dish was undeniably unique.

Bluewater: Rooftop Dining with a View

Walking up to the Bluewater rooftop, I was immediately greeted by a warm ocean breeze and breathtaking views of Biscayne Bay. With this said, you can tell this is a laid-back spot, one where you can enjoy disconnecting from the city’s hustle and bustle.

The vibe was effortlessly chic, elegant yet relaxed, the kind of place where you can sip cocktails, snack on fresh seafood, and watch the sun dip below the skyline.

I ordered a classic mojito, the mint and lime offering the perfect refreshment, and paired it with citrus-infused ceviche, a vibrant mix of fresh seafood, tangy citrus, and crisp plantain chips.

For those who prefer something heartier, the Bluewater Burger is a perfectly cooked Angus patty topped with caramelized onions and chipotle aioli. It is one to try out while visiting, especially. And if you visit on a Saturday, you can catch the Liquid Lounge, where a live DJ sets the tone for an unforgettable rooftop experience.

Olé: A Breakfast Destination Worth Waking Up For

Mornings at Olé feel like a ritual.

It’s one that starts with the comforting scent of freshly brewed coffee and buttery pastries. Whether you prefer a full breakfast buffet or a carefully curated à la carte dish, Olé offers the perfect start to your day.

I opted for the steak and eggs, the perfectly cooked cut of beef complemented by fluffy scrambled eggs. The waffles, drizzled in warm maple syrup, were golden and crispy, and the fresh Cuban pastries brought a touch of Miami’s local culture to the table.

With its inviting ambiance and top-tier offerings, Olé is the kind of place where you want to linger a little longer, savoring every bite before stepping out into the city.

Freddy’s Speakeasy: The Hidden Cocktail Lounge You Need to Find

There’s something thrilling about discovering a secret, and Freddy’s delivers that sense of exclusivity.

Tucked away behind an unassuming door, this intimate cocktail lounge is a step back in time to the glamour of Prohibition-era bars.

The lighting is low, the décor is plush, and the cocktails are classic and hand-crafted.

I started with a smoky Old Fashioned, served in a glass box filled with aromatic smoke, enhancing its deep, rich flavors. Next was a rum-infused tropical creation, a nod to Miami’s vibrant cocktail scene.

Every drink is a creative take on classic cocktails of yore, and it makes the place a true throwback to way back when.

Whether you’re looking for a sophisticated pre-dinner drink or a cozy nightcap, Freddy’s is the kind of place you’ll want to return to.
