Wilton Manors has always been known for its vibrant spirit, inclusive community, and electric nightlife — and now, there’s a delicious new reason to gather in this welcoming neighborhood.

Salvo’s Osteria Romana has officially opened its doors, inviting locals and visitors alike to experience a true taste of Italy, right here on Wilton Drive. This past week, Salvatore Mule hosted a standing-room-only friends and family soft grand opening that reminded everyone why this community is so special.

Salvo is far more than just a restaurateur — he’s a time-tested, successful entrepreneur with a reputation for turning dreams into reality. Over the years, Salvo has built a legacy of businesses rooted in passion, dedication, and an unwavering commitment to serve. What sets him apart is not just his business savvy but his big heart and genuine love for people. He remembers names, he greets guests like old friends, and he has a way of making everyone who walks through his doors feel like family. His latest venture is his most delicious yet: bringing Italian fine dining at its finest to Wilton Manors with the launch of Salvo’s Osteria Romana.

At the heart of Salvo’s is celebrated Chef Giancarlo Le Donne, whose culinary journey began humbly in the kitchens of Italy. Born in Sicily and raised in the food-rich cities of Rimini and Bologna, Giancarlo’s passion for cooking was inspired by his father — a chef himself — and a family deeply rooted in restaurant tradition. Over 28 years, Giancarlo honed his skills and earned international acclaim, including the prestigious Chaine des Rôtisseurs Award and a feature on an international cooking show. His signature style — seafood-forward Italian cuisine bursting with the fresh, bold flavors of the Mediterranean — is the perfect match for Salvo’s vision of sharing an authentic taste of Italy, right here at home.

Step inside Salvo’s Osteria Romana and you’ll instantly feel the warmth Salvo is known for. The recent grand opening brought out the community’s best, turning into one of the most memorable nights the neighborhood has seen in years. Smiles, laughter, and incredible food filled the air as Salvo personally welcomed each guest with his trademark hospitality and genuine gratitude. It’s this spirit — Salvo’s open arms and heartfelt warmth — that make his restaurant so much more than just a place to eat. It’s a place to gather, connect, and celebrate life.

The standout menu features classics done right: Saltimbocca alla Romana with tender veal scallops, the hearty Vitello o Pollo alla Parmigiana, and the juicy Tagliata New York — an Angus NY strip steak carved tableside. Seafood lovers will be drawn to the delicate Branzino alla Griglia and flavorful Red Snapper Livornese, while starters like the Tartare di Tonno and Burratina deliver fresh, artful bites.
