Step into the vibrant world of TAMBO Cocina & Cocktails, where flavor, creativity, and culture collide in the best way possible.
With a Latin fusion concept that’s both soulful and sophisticated, TAMBO offers a one-of-a-kind experience that brings the spirit of Latin America to their location at The Gates Hotel South Beach, with a distinctly Miami twist.
To dive deeper into what makes this culinary hotspot so special, we had the chance to interview Alejandro Nanno, TAMBO’s innovative Beverage Director, and Jonathan Rodriguez, who manages the restaurant and helps bring its food-forward vision to life.
Together, they gave us a behind-the-scenes look at TAMBO’s signature drinks, dynamic dishes, and exciting dining experiences.
Crafting Cocktails with Culture: Inside TAMBO’s Beverage Program
Alejandro Nanno describes TAMBO’s cocktail philosophy as a “vibrant celebration of Latin spirit,” and it shows in every glass. The bar’s signature cocktails are a bold mix of traditional ingredients and modern mixology techniques.
“Our standout drinks really reflect Latin fusion,” Nanno explains. “You’ll find flavors like guava, mango, palo santo, sage, and coffee, which are staples in Latin cuisine, used in creative new ways.”
Some must-tries? The Good Vibes made with Ketel One, mango, sage, and palo santo; the Luna Rosa, a tropical blend of Canaïma gin, guava, strawberry cordial, and lime; and Nanno’s personal favorite, the Tonka Express, which is a tequila-based twist on the espresso martini with Mr. Black coffee liqueur and tonka bean.
TAMBO’s cocktail program isn’t static either, it evolves with the seasons.
“We like to keep things fresh and exciting,” says Nanno. “Our seasonal selections and rotating specials are designed around tropical vibes and local ingredients. Plus, our daily happy hour from 6 to 8 p.m. includes curated bites to pair with your drinks.”
Pairings That Pop: Elevating the Dining Experience
Cocktail pairings are also part of the magic.
TAMBO’s attentive staff provides thoughtful recommendations to elevate each dish with the perfect sip.
For instance, the Good Vibes cocktail pairs beautifully with lighter fare like the Tambo Ceviche, while the bold, coffee-forward Tonka Express complements heartier entrées like the Tambo-Spiced Steak with coffee-ají chimichurri.
“It’s all about that perfect balance between flavor and experience,” says Nanno. “We want guests to feel like every element of their visit was intentional.”
Flavors That Tell a Story: Highlights from the Kitchen
When it comes to the food, Restaurant Manager Jonathan Rodriguez is proud to say that TAMBO’s menu offers “a tapestry of Latin American flavors reimagined with global influences.”
Standout dishes include:
- Tambo-Spiced Steak, finished with coffee-ají chimichurri for a smoky, robust kick
- Saffron Arroz con Pollo, a refined take on a classic comfort food
- Tambo Ceviche, featuring fresh corvina, mango, and lime for a bright, coastal-inspired bite
“We also love to bring unexpected touches,” Rodriguez notes. “There are elements like kimchi and saffron that elevate the dishes beyond tradition while still honoring their roots.”
For guests seeking lighter or vegetarian-friendly fare, TAMBO has plenty to offer.
The Tuna Watermelon Salad with halloumi and lime zest is a standout, and many dishes can be adapted upon request.
“It’s about inclusivity,” says Rodriguez. “Everyone should feel welcome here, no matter their dietary preferences.”
Events, Courses, and Unforgettable Moments
Beyond the à la carte menu, TAMBO also hosts curated dining experiences.
Guests can enjoy three- or four-course meals designed to spotlight the restaurant’s top dishes and cocktail pairings.
Seasonal holiday menus add another layer of festivity, making TAMBO an ideal destination for both everyday indulgence and special celebrations.
“Everything we do, from every cocktail, every plate, and every event that we host and plan, is part of our larger story,” Rodriguez says. “And that story is all about bringing people together through incredible food and vibrant culture.”
